Im always on the go, can anyone give me some tasty quick recipe ideas for a quick nutritious meal?

Separately, I keep some sauces. The one that I like the most is just a bunch of vegetables cooked slowly in a bit of olive oil and then I chuck tomato sauce into the huge "wok" frying pan at the end to make it like a chunky vegetable sauce.
Some people might think this sounds pretty suspect but I love it and it's about as healthy as it gets. So I cook broccoli, cauliflower, spinach, peppers, garlic and onion (you have to add them at different times as they cook at different rates) and then pour on a nice tomato pasta sauce. Then I put it in little one-serving tupperware pots and mix it with my choice of meat to take to work or on the road and by lunch time it's mostly thawed and I can microwave it.
Also you can add pasta, rice and other starch sources in an amount that is consistent with your goals.

Stir fry red and yellow peppers, onion, garlic, egg plant, courgette, black pepper, basil. When its done add a handful of spinach, break up some pre-cooked cod and douse in balsalmic vinegar or cider vinegar to taste. I'm not big into carbs, but you could add some yam.
For a really quick meal I like eggs. You can cook them in lots of ways, but you can't beat an omlette, plain or with all kinds added I think they are delicious. If you are dieting hard core make a three egg omlette but with only one of the yolks. They are so versatile, you can add, peppers, courgettes aubergine, salmon, smoked salmon etc etc etc. I honestly can't think of anything to cook from scratch that's quicker.
