Batch cooking sweet potatoes?

At the moment I cook sweet potato fries/wedges every day, they taste great but take 20 mins to cook.

I'm wondering if they would taste OK cold? This would allow me to cook a load of them and take them to work with me etc.

Also, if I was to make a large batch of sweet potato mash, same question, would it taste fine cold? How is best to store cooked sweet potato?

Just any tips on batch cooking sweet potatoes would be great!

Hi Craig,

It's always dangerous to try to answer the question of whether something tastes good because one person's 'good' is another person's idea of 'yuk'.

You can eat sweet potato wedges and mash cold. I personally have eaten both cold on several occasions (the mash is nicer in my opinion).

The wedges don't keep their crispiness whether they are cold or microwaved but the mash is fantastic re-heated in a mircowave.

With wedges, I just dust a non-stick pan with olive oil and then dust the tops of the wedges with olive oil and cook for 20-25 minutes at 200 C. With the mash, just cut the sweet potato up into little squares and then boil for about 10 minutes (stick them with a fork to make sure they are soft all the way through before you pour the boiling water out. Then just add a bit of milk (I used 100mL of full fat - some people use more and/or with butter) and blend with a hand blender or use a potato masher.

Cheers Mark. I think I'll try the mash as a bulk cook and eat it cold. Won't know if I like it until I try I guess! It would certainly be handy to cook a lot of it at once and store it in the fridge.
