Mark: What's your view on canned vegetables?

Hi Mark,

What's your view on canned vegetables?
The ingredients list on the back of the can reads: vegetables, water, ascorbic acid.

Is it more preferable to buy frozen veg and microwave them? or perhaps buy fresh, steam and store in Fridge?

Hi Castell

Frozen is best - possibly even better than fresh because they are frozen quickly shortly after being harvested and this helps retain more nutrients as compared to a fresh vegetable that has been transported over several days. Canned is ok but certain vitamins are lost and often salt or sugar is added. The ascorbic acid is vitamin C.
