Can you give me some advice on food combinations?

I have had success before with both cutting and bulking, but I have found that I don't really eat much of a variety of food, and some foods I would like to exchange out (bread being the main one).
Does anyone have any advice for exchanging bread out of your diet for something else? It's mainly egg based meals I have trouble finding something that goes well with:
For example, in the mornings I have 3 scrambled eggs on a piece of toasted wholemeal bread - what would go well with scrambled eggs but still give me a CHO boost for the morning?
Or I sometimes have a couple of poached eggs on toast during the day, or an omelette (no bread) with a few veg ingredients like onion and spinach which I'm not sure is enough for a portion of CHO... or is it?
(Let's assume it's a bulking phase just in case anyone asks!)
To be honest, any advice on easy and quick meals that people make would be good too!

It really depends upon your taste preferences. If you're bulking, you can add virtually any other carb - oatmeal, rice, potatoes (many oven-baked potatoes are excellent and only have a small amount of healthy fat). It is tough to replace the convenience of toast because it can be prepared so quickly, so oatmeal is probably the best substitute from that perspective.
A couple of heaping tablespoons of cooked onion or spinach is pretty much a "serving" of vegetables.
