Is anyone able to tell me (or link me to somewhere that can tell me) what is classed as a high intake per 100g of food for each vitamin and mineral?

I am not at all qualified to answer your question, and I am afraid that if I attempted, it would take up more than the 2,000 characters allowed for answers.

BUT! I do have a link that I think will be helpful place to start. The National Institues of Health is a large federal agency just outside of Washington, DC that performs and funds a tremendous amount of health related research here in the US. Within the NIH, there is an Office of Dietary Supplements and their website, http://ods.od.nih.gov/ has a fantastic amount of reliable information on supplements; I think this might be the best place to look for answers to your question.
